Baghdad
Baghdad's Boulevard of Broken Dreams is by artist Matt Chisholm. It is "a humorous look at the last day of Saddam's regime. Saddam contemplates his fate as he downs some tequila shooters". An American tank has just smashed through a building in the background. The diner is now "Al Saddam's".

Powers
This one was done for the cover of the comic "Powers: Roleplay", by Brian Michael Bendis and Michael Avon Oeming, 2001, Image Comics.
This is the second Powers trade paperback collection. Powers stories revolve around two homicide detectives in a city where superheroes and supervillains battle it out on a daily basis. The heroes specialize in cases involving these superpeople.

Atlantic Monthly
This was the cover of the magazine "Atlantic Monthly" from an unknown month. Uncle Sam and the Statue of Liberty are at the counter in the diner.

Religion
I dont know the back story to this one as I found it on a foreign language site. It was done by artist Cédric Tanguy though. It has a very large assortment of random things going on in the background a very religious theme to the diner with stained glass windows and a cross. The Diner's name has been changed to "Deborah" too.

Dinner's Done!
This one is called "Dinner's Done!" and was done as part of a www.worth1000.com photoshop contest by pdayjr. It shows the diner as being cloesd with all of the lights out.

Spacehawks
Another recreation of the diner in space. This one is by Reimund Bertrams. He says "People who will live in Earth's orbit will have the same interests that we have today – also after work. I want to show the little human side of space living, and the famous painting of Mr. Hopper seems perfect for my intention".

More of Reimund's work can be found here.
